Whenever I think about pina colada it’s always somewhere on a tropical island sipping on pina colada in my beachwear looking at the ocean. unfortunately, I can’t enjoy that scenery every day, so I thought I should create a dessert or a fun food item to replicate my love for cocktails and travelling

I love the combination of coconut, rum, and pineapple. Transforming this classic cocktail into a fun popsicle is definitely something fun and the perfect way to end a party as well.

Is it me or every time we have visitors over and they stay a little late and after a few drinks, we all need like ice cream or something to just sum up the night? hahahhahah it could be just me, but imagine, you have these popsicles ready to go in your freezer and you can serve your guest some fun popsicles at the end of the night. Oh, I am definitely going to do that in my next gathering.

What goes in Pina colada popsicles

Coconut cream or Milk- Coconut milk will give the creamy element to the dish

Rum or malibu – This will give the boozy element for the popsicle

Pineapple- Use canned pineapple, it has more flavour and is easier to blend as well.

Lime – This gives the added boost in acidity which compliments really well.

The essential equipment needed to make Pina colada popsicles

Vitamix has been my life saviour making any cocktails, mocktails, smoothies, purees, sauces and pastes. It is such a versatile blender. When blending things such as pineapple, which has so much fibre, it is important to blend the mixture until really smooth if not the little pineapple pieces will have a very unpleasant textural mouthfeel. Vitamix is such a good product that blends any mixture really well.

You will need to freeze it in the freezer until needed. This can be stored for up to 12 months

Can I make pina colada popsicles without alcohol?

You sure can, just omit the alcohol in the recipe to make a non-alcoholic version.

Pineapple, coconut and rum popsicles

Equipment

  • Vitamix
  • Popsicle moulds

Ingredients

  • 400 g Canned Pineapple
  • 160 g Coconut Cream or milk
  • 3 tsp Honey
  • 1 Lime juiced & zest
  • 80 g Rum or Malibu

Instructions

  • Add all ingredients to a blender and mix well until smooth
  • Pour the mixture into the popsicle moulds
  • Freeze for a minimum of 4 hours
  • Enjoy
