Servings: 3 people

Equipment

  • Oven

Ingredients

Beef rib marinade

  • 2 tsp Smoked paprika
  • 1 tsp Garlic chopped
  • 1 tsp onion powder or fresh onion finely chopped
  • 1/2 tsp Cumin powder
  • 1 tsp English Mustard
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Oil Canola, Vegetable, Olive
  • 1 kg Beef short ribs

BBQ Sauce

  • 100 g Brown sugar
  • 125 g Tomato sauce
  • 25 g Worcestershire sauce
  • 20 g Balsamic vinegar
  • 2 tsp Smoked paprika
  • 50 g English mustard
  • 100 g Water

Instructions

Beef ribs marinade

  • In a small bowl mix all beef rib marinade ingredients with a spoon until it looks like a paste
  • Rub the marinade on the beef ribs, leave aside for 20 minutes
  • Heat a pan or grill pan on high heat with oil, grill all sides of the beef ribs for maximum 2 minutes ( note this is done only until the grill marks are visible, just so the meat is sealed on the outside, this makes the meat retain its succulence and moisture inside)

BBQ sauce

  • Preheat oven to 180C
  • In an oven-ready deep tray mix the BBQ sauce ingredients together with a whisk
  • Place the grilled beef ribs in the marinade and coat the sauce all over, cover with foil and cook for 2 1/2 hours to 3 hours until the meat falls off the bone and tender.
  • Take it out of the oven and serve warm or finish on the BBQ ( If you wish to finish on the BBQ see article above on how to do that)
