Double chocolate chip muffins from scratch

Super chocolaty muffins with crunchy top

Ingredients

Dry ingredients

  • 100 g All-Purpose flour
  • 40 g Cocoa Powder
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 90 g White sugar

Wet ingredients

  • 36 g Oil Vegetable, canola
  • 1 Egg
  • 1 Egg yolk
  • 1 tsp Vanilla essence
  • 92 g Sour cream or plain unflavoured yogurt

Final ingredients

  • 60 g Hot water
  • 112 g Chocolate chips

Instructions

  • Preheat oven to 190C. Line muffin trays with cupcake liners or muffin liners
  • In a medium bowl mix together all the dry ingredients ( Make sure the flour, cocoa powder and baking powder is sifted)
  • In a separate bowl add all the wet ingredients except the hot water and chocolate chips together and mix well with a whisk
  • Mix both wet ingredients and dry ingredients together using a whisk
  • Add the hot water and mix well. Once the mixture is smooth Finally, add 3/4 of the chocolate chips (reserve the rest to add on the top)
  • Pour the muffin mixture into cupcake liners or muffin liners (fill all the way up). Sprinkle chocolate chips on the top
  • Bake for 17-25 mins
